Forgotten Weapons and C&Rsenal are good to get started I guess. Older firearms aren't really complicated for the most part and both of these channels take the guns apart and illustrate how they function.
Hickock45 is fun to watch.
Wikipedia is also a good place to start, but make sure to read the articles in English. For the most part they contain way more information about the operation of the gun.
