I'm looking for a reliable concealed carry firearm, preferably in 9×19 (though if something that isn't in 9×19 is suggested I won't sperg). I'd like it to be single stack and generally very low profile. Anything else is cool. Suggestions?

For Concealed Carry, I recommend a Walther PPK, it's actually a very small pistol.
other than that, I'm sure there are an assortment of .22 cal "Hooker Guns" out there to be purchased, something like a derringer might be appropriate.

I meant that m&p compacts (to differentiate it from the shield series, which are also compacts or sub-compacts) are great guns. The shields are also a good choice if you want an even smaller pistol.

Not single stack, but I CC a ruger sr9e. 17+1 rounds. I'm a pretty slim guy (5'11, 160lbs) and I can wear tighter fitting clothing and you still can't tell I'm carrying. Just get a good holster m8. Alien Gear makes amazing holsters.

If we're talking customizations, the G43 can't get an Apex trigger. M&P Shield does have a trigger kit

The g43 trigger doesn't have as many parts as the m&p. All you need are springs and a connector and you get as smooth a travel and a better reset than both stock and apex. Plus you don't need to take the rear sight off to install.
Do you have experience with either? I had a m&p 40 in which I got an apex and it wasn't that great, especially for the price of the kit.
