I just went over some of this in karate class last night. I've been in the program for 9 years now, but I'm no instructor or expert. I'll try to give you what I can as best as possible.
I: If you get charged or attacked head-on:
1.) Run if you can
2.) Keep your hands low to protect your stomach and keep out of range
3.) If they go in for a thrust, stab, or wide swing, that is your best opportunity to gain ahold of their knife hand
3a.) If they thrust or swing, dodge to the inside or outside of the arm and wrap up their arm, grabbing at the bicep and below the elbow with the wrist tucked into your armpit and their hand sticking out. Sometimes you can hit with a counterstrike hard enough to knock the knife from their hand to get them to fuck off (not recommended)
3b.) Knee them as hard as you can in the stomach while screaming for help. If you go to the outside, kick the back of the knee as hard as you can.
4.) For a downwards slash, similar principle to 3a but with wrapping the arm over your shoulder.
II: If they grab you and try to repeatedly stab you:
1.) Grab back to keep your attacker at arms' length, bending forwards with your other hand to protect your stomach
2.) Kick them in the balls or stomach OR
2a.) Hit downwards with both hands to the knife hand and grab the arm. Go in and hit them hard with your shoulder, keeping the knife pinned on the side out your hip.
3.) Keep the knife at your hip, put your foot behind theirs, and push their chin upwards until they fall over. Keep the knife at your hip, put your knee on their stomach, and pound them and scream "DROP THE KNIFE"

III: If grabbed from behind
1.) Throw your hands up right away and give the whole "I don't want no trouble" spiel; act afraid
2.) Grab, pull downwards with your hands and push your body upwards at the same time, pulling the knife away from your throat
3.) Duck and go under the arm and behind them, still grabbing it tight. Keep the knife at your hip again.
4.) Apply pressure above the elbow, knee them in the stomach a few times, and pull them down to the ground
5.) Put your knee on their back and hit them until they drop the knife; yell for help as usual
There's only so much that I can tell via text; You're best up hitting a knife defense seminar at a local dojo, or looking up knife defense videos online.

I should have been more specific--I study Taijuitsu primarily. 2nd degree and up studies jujitsu as well. My dojo also teaches BJJ classes separately.
They're both rather practical martial arts, as Taijuitsu has no rules saying what you can and can't do to fuck someone up. Kicking and punching kneecaps, funnybones, temples, kidneys and the like. Whatever you can do do get out of the situation alive, Taijiutsu encourages it.
Juijitsu has a rather long learning curve, but it's really damn effective if you know it well.
