We're right on I35, so we got a lot of Canadians making their way down south to visit Texas or something.

Plus the blade has to be over 3" and either be straight or not have a locking device before any of what I said above applies. Which means most multi tools are A-OK.

First instance:
If the rapist has physically subdued you you or the person being raped (assuming you aren't the victim) then yes, the use of a knife to incapacitate him is reasonable use of force.
Stabbing him fifty times and 'making sure he's subdued (ie killing)' would not be reasonable, despite being the right thing to do. Having said that, I doubt CPS would press charges or find a copper willing to testify against you.
Second one:
If he is armed or has used or threatened physical violence against you, a cricket bat is a blunt weapon and therefore reasonable use of force. Again, besting him when he's down or attacking him unawares would not be reasonable, because he hasn't posed a direct threat to you.
Best advice = follow the advice I was given many a year ago: make yourself known from a distance, make it known you're armed both verbally and visually, and if they don't back down or respond in kind, smack them, smack them haaaaard.
