Keeps the sun out of their eyes. The same reason everyone else wears them really. The only reason they are associated with operators is because everyone else has to wear a cover or helmet or whatever.

Well Berets are just plain the second most useless piece headgear next to the religious skull cap thing Jews and Muslims wear. Berets don't keep the sun off your eye, don't keep you warm in the cold, make you hot in the heat and is really a European fashion and is darn American damn it!
Base ball caps at least shade your eyes and can a cover from soft rain, isn't overly hot to wear, double so if mesh backed and you can clip it to your belt when not in use if you have a traditional loop back.

Boonies are still valuable gear since it's a wide brim hat, and why would you not want a wide brim hat in the desert?
The only down side is that Boonie hats only look "cool" when clean and strait brimmed for photo ops. Once in the field, sweat will cause the brim to scrunch and ruffle and then they shrink if you wash them now they are called witches hat's.

in all seriousness its the trends of the times. Some operators wore them in 2004 or so and it caught on, throw in video games like call of duty, movies, shows and the media in general and before you know it everyones wearing a baseball cap because why not? and yes boonies are literally vilified in the marines and you will get called a faggot for liking it, because marines are faggots and the biggest example of following trends (i knew people who got addicted to dip simply because their DI did it)
