It's just a matter of the legal definition of a pistol versus the legal definition of a rifle. Stocks are mentioned in the definition of a rifle, so adding a stock to a pistol makes it a rifle.
The "no foregrip" thing comes from the atf being gay about the definition of a pistol including "fired using one hand", which is patently untrue these days anyways. Charges for adding a foregrip to a pistol have been dropped before, though, because the atf doesnt actually get the real final say in what the laws mean.

Folks mount one if those picatinny rail to sling/bipod stud attachment then attach sling or small bipod and use it as vfg.
Theres even some online thats plain picatinny rail to looped sling just right size to have hand through it.
Get those if you want something like vfg on pistol but legal
