I've recently acquired a desire to understand planes more indepth, like the physics of what makes one plane more maneuverable than another. I ordered a book on the F-4 Phantom but it is taking forever to get here. Does anybody have any other suggestions?

As far as aerodynamics and maneuverability goes, I can tell you that it's effectively voodoo roughly governed by a couple of experimentally derived equations. Maneuverability is such a broad and vague term that it all depends on what exactly you're looking for.

If you can afford it, a one or two hour flying lesson will really help with learning about how planes work.
Also they eyewitness book on planes/flying machines does a really good job of tracing the development of planes from the 1700s to ~2000 (might be a new edition). That should be a good jumping off point, since the book cites all of its sources.
