Alot of ways. Surface search radar for one allows for periscope detection (and the sub itself of course if it's surfaced). Diesels need to send up a snorkel occasionally, which is a risk.
Then there's sonobuoys, which are exactly what they sound like. They're little buoys that are launched out of the plane. Active ones send out sonar pulses, while passive ones only listen.
There's the Magnetic Anomaly Detector, which again is basically exactly what it sounds like. It only works from a very low altitude however, so there's a limit with how much ground you can cover with it (and it also places you at risk for retaliation). It's generally only used to confirm a target area you already suspect. The P-8 did away with it to save weight and extend range and endurance.
You can also try and detect the sub's radar if it's using it atm, and IR sensors can help detect a sub, though only a surfaced one (useful at night at least).

Yeah instead they got the "Diesel Sniffer" system that's supposed to be able to sample the air and determine if a diesel sub is nearby. Combine this with their 3x10 shot revolver Sonobouy launchers and they can carpet a sea location really quickly.

Possibly the most underappreciated plane of NATO right now in just how much it does for every theatre it enters, including (but not limited to) Afghanistan, Iraq, Syria, Libya, Nigeria, the Med Sea and during floods, even the UK. It's a major part of why the UK has flown 30% of all surveillance missions in the Intervention against ISIS. (Which for a theatre involving the US, is a huge number for a single nation)
Just a fucking massive ground sweeping radar to collect enormous quantities of surveillance, collated all on board and immediately transmitted to all units or back to homebase for analysis. Add on a massive range and endurance and it's just the epitome of "boring but awesome."
