Its pretty hard to go wrong. Most all intermediate rifle cartridges do the trick, and anything bigger than that of course is plenty adequate.

I couldn't possibly haul back every hog I kill during a shoot, most people couldn't either. They may not stand tall, but the bastards are made of lots of dense muscle. Its heavy and takes up a lot of space. For the sake of pest eradication a huge portion of kills are left where they drop unless they're in a farmer's field and need to be hauled out of it.
Though if you want really good pig meat take the chops to a butcher and have them turn em into cube steak, complete with all the trimmed fat. Season with some Lawry's and fry in a pan. Its out of this world.

I think every hunter who has been at it long enough has his own "special bait" or has heard of one from someone else. As far as I can tell pigs just like things that smell. The creatures will eat just about anything so they clearly aren't picky. Put something new in their environment with a strong smell and they'll come check it out.

Wild boar is technically edible. But its fucking bad meat. They live on a constant diet of literal refuse, maybe 10,000 years ago boar was good eating, but you .might as well eat racoon for all the shit, death, and garbage a wild boar eats in today's world, never mind the parasites.
Any full size rifle cartridge will put them down clean and easy. They are also good sport for more off the wall cartridges like magnum revolvers or intermidiate rifle cartridges (use your fucking head, dont hunt a 700 pound monster with your sweet AR).
Good hunting, good for society, good for hog population. However, leave them for the scavengers, the meat is shit.

OP here. I ask because I'm going to be soon moving down to Melbourne, FL, and I am hoping to get into some serious hog game when I'm down there. Any tips for starting out? I have a Mossberg 590, Ar-15 and a single shot 20 gauge available for hunting.

Animals tend to take on a flavor from what they eat.You can buy super expensive cured ham that lives most of its life eating chestnuts, or lamb that eats ripe blueberries. Hogs run around in the wild and eat anything. Some of them stick to plants, roots, and stuff like that. Others will eat a squirrel whole if they can get it in their mouth.
That and the older an animal is the more shit its going to have absorbed during its lifetime, so if it was eating garbage then its probably not going to taste the best. Some taste good, others don't.
Like every animal out walking this earth could have some parasite or another and you'd never know unless you sent the body into be examined in a lab. Cooking the meat to the proper temperature is sufficient for killing most any worm or what have you.

Short answer is, it depends. Some is decent, some is "holy shit dig the deepest hole you can and bury the fucker". None of it is commerical-pork-good, but most of it isn't inedible.
Flavor depends on both region and their specific diet in that region. Don't even bother trying to eat a suburban hog, no amount of sage or hot sauce can cover up the taste of the literal garbage they eat (they can be worse than raccoons on raiding garbage cans, but will actually consume everything in it from AA batteries to dirty diapers), while super-rural hogs that only eat corn from the fields is decent. The closer to salt water for whatever reason the milder the flavor too.
On top of that, old hogs are nasty and tough, full stop. Unless you get a chance at a trophy Russian Blue (800+lbs), stick to shooting the smaller, younger hogs if you want to eat them.

The benefit of the forest is that it'd be hard to spot/shoot one from far off, wheras in the desert you're gonna notice a huge beast off in the distance.

Yeah, that's what I get.
When I do sausage, I'll usually do 500-1000lbs at a go so giving away 180lbs of it is really nothing. I grow sage and at least here the wild hogs are fatty enough I don't have to add any porkfat to the sausage, so literally my only expenses are time and a small amount of electricity to power the grinder.
I actually give away faaaaar more than I sell because fuck storing several tons of sausage.

you really want to use a full size rifle caliber. it is safer for you and more humane on the hog.
milsurp rifles with bayonets are a really good idea. because if you are being a fucking idiot and are hunting at ground level. You have a backup in case the hog charges you and gets close. plus it allows you to put down any hog that is shot, laying on the ground, and still alive., with out having to shoot it again.
good luck finding a place to hunt with out knowing someone. texas has very little public land. so make friendly with some farmers and ranchers.
