I don't need to store much food beyond a few homemade canned carrots, potatoes, corn, tomatoes, and mixed veggie blend of some sort. I get them all from my greenhouse or from local farmer's markets. I make my own beef jerky, turkey jerky, and more right at home, which store forever.
Right now my food supply would be, a can of spam, 2 cans of baked beans, think a tin of corn somewhere and whatevers left in the fridge/freezer which isn't much.
Got to love being out of work and broke.
When things get better I'd love to get a dehydration unit and vacuum sealer and make my own backpacking/trail meals that also would work really well as a emergency supply of food.
Shelf life wouldn't be as good as freeze dried food or even professionally dried meals I reckon, but then again I'd rather rotate my stock of food quite often instead of just having it sit there for ages at the time.
Don't put all your eggs in one basket. Keep a mix of freeze dried goods, dry goods (rice, beans, etc), canned goods, MREs, etc.
Rotate your stock, but remember that if kept in a cool dry place, food lasts well beyond the expiration date. Particularly canned goods. After canned goods expire, the texture and nutritional value will very slowly degrade over time, but as long as the can isn't bulged, rusted, etc it's probably safe to eat, even if rather old.
