The US didn't get to develop the myriad of VLO/LO projects without taking the numerous steps to even get to the point where a 5th generation aircraft, capable and worthy of being produced in numbers, was feasible.

I asked a Pratt & Whitney engineer and he said the chinese were trying to make F119 engine parts but were unable to.
mainly the combustors and Vcat assembly.

If you think 80s era ME AFs could hold a candle to the IAF you are sorely mistaken. Their pilots had more hours, regularly trained with the USAF and received first party tech transfer from the US. The F-15 just exacerbated how much better the Israelis were than their adversaries.

Keep in mind that Thailand is a key-US ally in the region (or was for a long time), so these "leading western pilots" that they trained with should actually be pretty good.
PLAAF's training and excercises are getting increasingly good, even with deficient hardware at times.
I wouldnt lean back, as these J-11 and Su-27SKs are 90s technology directly imported from Russia and shouldnt be indicative of the huge improvements in avionics and weapons that the subsequent batches of J-11 (J-11A, J-11B, J-11D, J-16) enjoy. Not to mention that the basic J-11 and Su-27SKs are getting phased out quickly due to the end of their airframe life (they are about 20 years old by now).
And playing DCS, I can really relate with the woes of those Chinese Flanker drivers: The Su-27S' avionics, radar and especially their semi-active R-27Rs are literally garbage. It takes a lot of luck ontop of god-tier calculation-by-mind to win against an opposing fighter equipped with AMRAAMs.

And with a notional RAM coating applied (a very commonly known recipe; Ferrite and CFC), the RCS is consistently below -26 at least, even for the nose/fuselage cross section, which is the biggest radar reflector.
