My EDC knives are typically used for food prep, cardboard breakdown and double layer clam-shell packaging.
I've never had any issues running my edge-bevels at ~7 degrees per side with a 15 degree per side micro-bevel. Besides that, technically it is thickness behind the edge that matters, not angles, and my knives are mostly around ~0.010" thick at 1/32" behind the edge.
Most modern production folders come with stock geometries that are designed around minimizing warranty claims...
