Sakuya has it pretty damn hard because of the incompetence of the fairy maids, but she also has time/space manipulation to make it easier on her. A normal, decently capable person would probably be worked hard but not excessively so. Which is fair, in my opinion.
EoSD was probably an accident in this regard, but intentional or not, ZUN keeps the mystery behind many of his characters by not revealing too much about them.
Part of why she's so popular is because fans are allowed to freely speculate on her origins with a couple of threads for them to latch onto here and there, like the thing with Eirin. But give them more and they would just as likely ignore it if it wasn't to their liking.

Good question, and one I don't have a satisfactory answer to other than "She was rich as fuck in the outside world and brought it with her to Gensokyo", which still isn't great.
Regardless, I'd be surprised if she paid Sakuya, or any of her maid army, in legitimate money instead of basic necessities and occasional time off. Maybe the occasional favor if you do a legitimately good job.
It's completely possible there's details in the print materials I'm forgetting, though. It's been a long time since I've looked at them.

I've always figured Sakuya wasn't entirely 100% whitebread human.
You would think with her ability to stop time it would completely screw up her aging, considering she's still alive and moving, all the time she spends doing it would start to add up. I simply don't see any way she could actually be just 17-ish years old (or whatever teen age they estimate her to look like).
So its probably something like she's able to halt her own aging but is otherwise entirely human. This means however that she can still die from anything else that might kill a human, which is why Remilia is concerned and the whole IN conversation happens.
