Writing is a lot of work. It's common for writers to lose ambition over the course of a project. It's clear that you like writing; otherwise you would not have struck up a new project. The issue then is usually discipline. Writing is fun, but it's still a great deal of effort and needs to be treated as a task. Set deadlines for yourself and try to build a habit of writing. You misunderstand what I mean by realistic goals. It's not about the length, it's about the way you define them. Part of the problem you have with motivation is likely the requirement to have a release every week. You're writing a story, not a bunch of chapters. It may help to instead set your deadlines by story progress and simply release new chapters when you believe that the content is sufficient to justify a chapter.
You absolutely can afford that kind of attitude. You write because you want to, not to keep a bunch of assholes on the internet happy. I'm not saying that you should ignore them entirely, but if they're going to have a problem with you having a slightly irregular schedule, you may want to rethink where you are posting your work. I've seen a lot of writers burn out because of perceived expectations of them and their stories. Don't become one of them.

When fighting a new monster, spend a minute or two learning its moveset, and how it'll attack you.
How they choose attacks is based on your distance and position around them, with a slightly predictable random factor.

That's pretty much it. The Greatsword is like the staple weapon of the series, and its rough cycle is:
Run up to monster > draw into longest charge attack possible > attack > sheath, run away and repeat
There's no shame in taking uncharged or less charged potshots at monsters you're not so comfortable facing, though.
