I was thinking of going there to teach English for a bit, because I've always wanted to live somewhere cold as fuck and in Japan, but away from big cities like Tokyo. Any reason I shouldn't?

None that I can think of.

There is a touch of "You can't walk into my restaurant/bar/hot-spring if you aren't fully Japanese" but that's a very small minority there.

But, of course, the last time I was there was 2012, so maybe thinga have changed

The architecture feels less Japan than other parts of Japan. Hokkaido was developed pretty recently and was planned by foreigners so you see western style buildings everywhere.

It is still pretty nice but doesn't feels as exotic as other parts of Japan. On the other hand you have plenty of little habited places to explore.

I feel like there japan in general is pretty welcoming. And I found out that here in the university there are many parties where foreigners can get in for free. It doesn't says that you have to be an student and nobody checks IDs so I guess you can get in just fine. Just keep in mind that they aren't raves with lots of alcohol, they are nerdy parties with talking, snacks, juice/tea and bingo. Parties with alcohol usually are paid but in many foreigners get discount. They are events for natives to meet foreigners/practice English.

It gets really, really cold during the winter. It's also cozy, and it feels different from the rest of Japan. I loved going there back in January 2013, definitely my favorite prefecture.

Water currents and Okinawa is really far away.

Also it still have snowed only once and the snow melted right away. It should start accumulating in december and stay until february I think. There is no way it can have snow 6 months a year but when it snows I heard it snows a lot.

Lots of small farms, villages, and then there's Sapporo.

Called 'snow land' because it has the second highest density of snowfall per year in the world is there. It competes with some town in the north pole in Russia and Kamchatka. Like 99% of all Japanese Hockey and figure skaters come from here.
