I started with Sapporo Ichiban but then later decided to explore other avenues of ramen. Paldo's Gomtang ramen has become my favourite as of late. Not too salty and the broth is light.

This is probably a pleb way but I did one once with beef stock and vegetable stock and sesame oil and soy sauce and it was pretty good. Also put some veggies in there like carrots and mushrooms. And some actual meet I put stew beef in mine.

Here's how I make my maruchan in the microwave, because my apartment sucks:

Fill microwave safe bowl half empty with cold water
Microwave water 2 minutes
Add block of ramen, ensuring it's at least half submerged, microwave one minute
Flip, microwave one minute
Flip once more as best you can with it falling apart at this point, stir a bit, ensuring it's completely submerged in the water, microwave one minute
Take it out, add seasonings, stir in said seasonings, enjoy.

Sometimes I drain the broth and microwave cheese on it, mix it in with some tobasco.

I don't know why I felt it necessary to share this, maybe because I did it wrong for so long. Enjoy, faggot-san.

I've tried both the Santouka and Ippudo ones in that picture. Santouka was pretty decent, but Ippudo was absolutely amazing. It retained the creamy flavor of the tonkotsu broth pretty well.

There was also this black condiment that give it this roasted flavor...I don't know what it was but it felt like charcoal.

I must caution you, /jp/. Nourishing yourself almost every day with delicious ramen for ten years is nothing to be proud of. It probably contributed to my poor health, even though I did my best to include vegetables, meat and dairy. Remember the scene in Oldboy where he recalls the flavor of the wantons? It's like that... It almost ceases to be food, it starts to taste and feel different like chewing Styrofoam even though nothing has changed. I could feel that myMy stomach felt the same way.

My body wasn't ready for over three thousand ramens, but it is healing now with a more diversified and higher quality food portfolio.

Don't forget about rice n beans, and that you can add meats/vegetables/eggs to your ramen to make it more nutritious. I find that making curry is good too, you can find some cheap pre-made mixes around and even if you cook half of what it asks you to (they're expecting you to cook for a family), you can eat half for one meal and the other half for another meal. For example, there's this butter chicken mix I can buy at Sobeys for $1.60 and it contains enough mix for 4 meals/8 if I eat half.

Try looking around this blog, it has a lot of cheap and easy to make meals.

I've got one packet of shin ramyun left, and I want to eat the enoki with it. But the last time I tried, I think the enoki was overcooked. It was soft on the outside but really firm and chewy on the inside.

Real ramen takes actual ages to make because you need to make beef, vegetable or chicken broth and a dashi stock, and you need mirin, sake and soy sauce - plus whatever condiments you want on it, typically fish cakes, fermented bamboo, or some forms of spring onions and whatever else you want (can be fresh or soaked eggs, or a lot of other things).

I usually follow this recipe http://www.seriouseats.com/recipes/2012/03/chashu-pork-marinated-braised-pork-belly-for-tonkotsu-ramen-recipe.html with some modifications since I don't have an oven handy.

First I take those proportions of ingredients and toss them into a big pot, tie up a rolled up slab of pork belly, boil the contents of the pot then add the roll of pork.

I then turn the heat down as low as I can until the sauce stays at a slow simmer, and let the pork stew for 3-6 hours while turning it first every 15 minutes then every half hour. Make sure the heat is right so the meat doesn't stick to the bottom.

Once the time's up the pork should be cooked through perfectly, so I leave the pot to cool for a few hours (say overnight) before taking it out in the morning, sticking the pork in a tub filled with the sauce, and leaving it in the fridge until I want to eat it. Make sure to save all the sauce since it's very reusable for pork and other things.

To serve, slice up some thin slices and brush the sides with sauce, then sear both sides in a frying pan before adding to your ramen.

Or TL;DR: 1. toss that list of stuff into a pot and boil 2. drop in pork and slow cook for a few hours 3. pour out everything into tupperware and stick it in the fridge til you want to eat 4. slice sear serve.

Serious eats ramen pisses me off because what they say about eggs. My favorite eggs for ramen are when the yolks are just set so they don't spill into the broth, but serious eats tries to say with authority such eggs are gross and disgusting.

The yolks they talk about aren't the runny ones that leak out all over the broth, the ideal is to have it be gooey but semi solid so that after soaking in a sauce the yolk itself gets the consistency and flavour of a sauce. This gives a prime mouthfeel superior to a leaky runny watery yolk or a hard cooked and almost sandy tasting yolk. Getting the timing perfectly is pretty difficult and the eggs have to soak in sauce for a long time though.

I had an amazing bowl of tsukemen with my friend (pictured) in Osaka last year. I'd never heard of tsukemen at that point, and the only guy there besides us didn't speak any English. We almost poured the broth into the noodles, but he gestured dipping the noodles when he saw one of us pick up the broth bowl.

I've tried three or four different restaurants' tsukemen since I got back, but none are nearly as good.

I'm afraid your description regarding Tonkotsu and Shio ramen fits me perfectly although I agree after a while Tonkotsu broth gets too much and heavy for me to digest as well.

Hell I'm okay if they cheap on the toppings as well as long as the broth is good.

My personal list is:

1. Tonkotsu
2. Shio
3. Miso
4. Shoyu

But they're all good.

I'm worse, sadly to balance my macro nutrition I have to add more fat.
So I would put in my Shin Ramen Cup on the stove since its better to add my shitty ingredients.
I add 2 tbs butter, 2 tbs ranch, and american cheese with 2 soft boiled eggs. Its surprisingly good but I did this more for a balanced meal.

I used to love instant ramen + baked beans in tomato sauce when I was in my teens but then I realized how much salt one meal of that had. It was like, far more than you're supposed to eat in a whole day!

I still have that sometimes tho, sort of like a guilty pleasure with a hint of nostalgia in. But now I usually use plain noodles with non-salty spices, so it isn't as unhealthily salty.

Golden Curry roux blocks have started to become common in US supermarkets, but I still have to buy the premade packets online usually. I've seen them before in stores though.
