Anime is in basis a style developed for animation, so it's very purpose is a simplification that is efficient and feasible enough to be drawn and shaded at 4-12 frames per second. The image in OP isn't exactly realism either, it's still stylized in lightning, colour and detail - in fact, it's a blend of neoclassicism and rococo (i.e. neo-rococo), which were thought to be opposites at the time.
There's no reason you shouldn't be able to find a half-decent middle road between something realistic and anime, just don't expect it to work with shovel-faced moe without treading the line of uncanny valley.
