the only benefit i could imagine is that working with one brush keeps you from getting distracted/muddying up a picture with 15 different brush settings. might be helpful

I used to do my earlier painting with only one brush and it worked for me.
I personally like using one brush because I feel like it's closer to traditional painting and I just like the way it looks t b h. You also learn not to rely on soft brushes / smudging for your color blending.
