Instead of drawing directly what you see (i.e. an eye), your brain/subconscious interprets it and draws what it thinks is an eye.
If you're using a reference, it helps to draw with it upside down, or cut into squares and all drawn individually.

Be kind to yourself and buy a ream of blank copy paper to draw on, if not actual drawing paper.
