They didn't call themselves Byzantine, they still called themselves the Roman Empire, Basileia ton Rhomaion.

Constantinople's old name "Byzantium" was pronounced bee-tsayn-tih-uhm, so if they called themselves Byzantine (Byzantinos) it would sound like bee-tsayn-tin-oss, so..
