There's not that much else to see that far down as far as I know. Simbel is impressive but from Aswan you can visit Elephantine, Philae and a few other (now former) tourist traps like the Old Cataract hotel so it tends to be as far down as tourists get.

Never been as I really don't want to go near Cairo, but there are bound to be. There are plenty near the valley of the Kings in Luxor, but if Egypt ever becomes good for tourism again I recommend a cruise down the Nile it stops of at the Temples and sights of interest along the route so you see more of the history.
