It was a Byzantine symbol that was adopted in the middle ages by various Muslim armies.

Countries that use the symbol now just stole it from the Ottoman flag.

The "Islamic " moon and crescent has to do with Turkic dieties related to Tengriism. It has nothing to do with Byzantines, Muslims, or pre-islamic Arab gods.

Before the Turks their was no real symbol for Islam other than maybe colored banners with calligraphy

IIRC Allah was in the moon god you are talking about before the pre islamic era. But OP is correct in my opinion. The crescent was used after the conquest of Byzantium, those greeks used the crescent before constantine settled in. Its no coincidence that both crescents look very much alike.

That's Pre-Roman. It's from the Greek city of Byzantion (later essentially rebuilt and became Constantinoupolis). I think the Crescent and Moon was a symbol of Artemis.

It can be found in many cultures around the world.
The "Wu Xing" (five Chinese elements) is one example, with a pentagram used to show the "overcoming" cycle.
It's not an exclusively European symbol.
