What is the most recent army that the Romans could beat? I was watching Kingdom of Heaven which is set in the 1100s and I really don't see why Crassus' legions couldn't beat the Knights Templar. Nobody was wearing plate in the film all they have over the Romans is the stirrup and maybe crossbows.

I assume you mean the Late Republic legions since you mentioned Crassus. The answer is whoever can match the Romans discipline and/or catch them at their weakest. Technology wise isn't nearly as important since per se, but it would give the Romans an edge since they have manufactories to supply their legionaries a lot better than any medieval army in the high middle ages.

Because the KTs were mainly heavy cavalry shocktroopers, the kind of which Romans never did well against, but cranked up to 11. Plus, they had Turcopoles and Templar Seargents supporting them with archers.
Hell, especially Crassus died against a similar force.

On top of this they're mounted on war horses, work as shock cavalry (which fucks Roman shit up), and the only real counter to is large pike formations, something the Romans were never big on. On top of this they have mercs working as light cav or missile cav, which also fucks Roman shit up, and completely neutralizes their reliance on infantry.

But you're a fool if you think that Roman legions could go man for man with professional troops existing in the 12th century. Combined arms, increased role of cavalry, actually integrating lighter troops into battle plans instead of just letting them do whatever; warfare had advanced a lot between Caesar's day and the crusades, and saying "Well, everyone's got chainmail" is just dumb.
Hell, the crossbows alone are going to require some serious rethinking of the Marius military model, as suddenly, the paradigm that existed back in the 1st century, that heavy infantry is effectively invulnerable to skirmish troops no longer holds.

Bad comparison, the Parthians were not even close to a medieval army at Carrhae, more so a Mongol army since the entirety of the Parthian force was mounted and were composed of 90% horse archers.
The Parthians pretty much arrowed the Romans to defeat, as sooner or later, something would give and that was what happened, the Romans were too debilitated morale wise to advance and couldn't catch up to the horse archers, whose constant arrow barrage whittled down the Romans.
The Romans themselves were also ill prepared, lacking any major cavalry arm and also auxiliaries. I believe they were also in the middle of a fucking desert and were severely fatigued to begin with and was baited for a few days prior to the battle.
Lastly the Romans were not wiped out by the Parthians, since Crassus was killed during a truce meeting offered by the Parthians themselves and his entire army then ran and discentigrated.
The battle itself was considered more of a fluke since a shitty Roman general and bad organization was more to blame, as the Parthian capital was sacked a few times in later centuries.

No one, because no one had the state infrastructure to match a functioning roman army. You couldn't beat the army, you might wound it, but it would grind you into submission. This, horse archers were not the invincible rape machines people think they are. Only on very flat ground, can a rider shoot his bow and arrow while riding. Most times the rider would need someone else to ride along with him to hold the reins of his horse to turn after they shot.
The failure to deal with horse archers is to due to logistics. They can show up quickly, and deal with bad links in the chain. You need your own fire support to deal with them, with crossbows being killer. They run up in parthian style to shoot and then turn away? Fire a bolt into the horses chest from behind a shield wall
Of course these are all counterfactuals, that reimagine the possible ways to engage the horse army in the field. The only thing we know for sure is that horse archers did some stuff from eastern europe all the way to china and seemed pretty effective.

First, testing shows that you're just not going to defeat mail by poking it with a single handed sword. Were it readily defeated in this manner, it wouldn't have been fucking used at all, much less supplanted almost every other form of armor everywhere it went.
Mail was slow to make, expensive, and annoying to wear. And the most common threats were spears and fucking arrows. Were swords able to easily pierce it, or even consistently pierce it, it would have been rather shitty armor.
Second, celtic weapons often have spatulate tips, and EVERY source indicates that they used them almost entirely to cut.
Third, iberians also used the falcata right alongside the gladius, and it sure as fuck doesn't have a SUPER CHAIN BUSTING TIP.
