For Iran/Persia it's Axworthy's empire of the Mind.
Don't fall into the trap of just putting your attention into the Achaemenids, read this general history and decide what time period is more interesting for you.

Fair enough. If OP wants to learn about Zoroastrianism, going for only the Achaemenids is a serious mistake though.
