Same reason why most mythologies also feature huge reptiles, fish, birds, carnivorans etc.
Conceiving a bigger version of a regular creature is a simple way of making said creature scarier or more imposing in stories, so most cultures did it.

What I'm more confused about is how every culture has both a flood story and a "the day the sun stood still" story. It's intriguing, and far less coincidental than larger versions of existing creatures.

It varies from entire day to the long day depending on the area.

China has records of a Long Day, Aztec records depict the stun standing still for a whole day, and Egyptian wall carvings also show records of a long day occuring.

Whether this is just coincidental or not or some phenomenon that actually happened is the question. I don't believe the sun stood still for whole day by some supernatural greater being at any rate.

It's also worth noting that because of globalism and cultural contact, plenty of groups that didn't have these stories ended up picking them up. For example, a lot of Native American groups have flood stories that are kind of awkwardly inserted into their oral traditions and are obviously the result of missionary influence. The same is probably true of a lot of other cultures as well.

Hunter-gatherers were a good few inches taller than their farming neighbors, at least before they were moved onto marginal land. This is a process that also happened everywhere in the world.
