Basically those are some papers about educational for teachers. Seems pretty bureaucratic to me, although i didn't go through every piece yet.
That letter is more or less a child asking its parents to be vaccinated against Diphteria.

Ehh, that's actually even cooler I'd say. If Mylar is expensive (it lasts forever though) you can also try polypropylene sleeves, Treasury brand or whatever depending on the size of the documents. Aside from disallowing light to further yellow the paper you also want to keep it airtight as possible, since it will still rot. Believe me, I've lost many valued doujinshi to these evils.

That type of writing is called "Kurrentschrift". It was popular from the 16th to the mid 20th century.
Hard to read for someone who isnt used to it.

I think this one is about selecting teachers that have to work in the newly conquered areas in the east to observe the not german schools there, the selection is based on volunteers. There will also be teachers that come from the Wehrmacht.

Reading these documents it appears that they were from a part of Germany that was given to the Poles after the war (Oppeln/Opole). Some of them talk about sending teachers to occupied regions though.
