Why is Jesus always depicted as a white man?

Because since He's the Saviour of all mankind, each culture applies their own appearances onto Him as to make His message universal. It is not what Jesus looks like that is important, it is what He preached and died for.
Because in the oldest image of the guy from the 6th century, he looked white.
That being said, the Bible doesn't say too much about his appearance.

Different cultures illustrate God as looking like the people they're most familiar with, because when one actively tries to develop a personal relationship with a being, subconsciously, that being is going to start looking like the people you see everyday.

Jews are an ethnic and national group with their own ethnic religion, not a race.
They are not really unique in having an ethnic religion. Religions that appeal to a specific people from a specific place include Judaism, Hinduism, Shintoism, various Native American/African/Pagan religions, Zoroastrianism, and so on. By far the largest ethnic religion though is Hinduism: Judaism is tiny compared to them.
These are different than religions that can have a more world-wide appeal, like Christianity, Islam, Buddhism to name a few.
There are a lot of groups whose national/ethnic/religious identities have blended together over time, and Jews are one of the most prominent examples of that. Others might be Armenians, Yazidis, the Amish, Sikhs, and a bunch of more obscure ones since their numbers never get that high.
The big difference between Jews and the rest of them is that in edition to being one of the mixture of national/ethnic/religious group, Jews also have a diaspora, which is when a population of an ethnic group gets split up from their original homeland. Hence the push to (re)create a Jewish homeland (Zionism) thousands of years after their initial migrations, starting before and continuing during/after the Roman occupation of Judea. Judaism is an ancient religion.
Other groups experiencing diaspora would be Gypsies, Tibetans (moving to India), Africans (slave trade), Armenians, and so on.

Christianity in Europe was a power grab, Rome was gone and they needed a new emperor. They found one in this Jesus fellow. Now who's the most powerful if everyone believes Jesus is God's son? Anyone associated with the church, and whatever king has their blessing. It was designed sort of as a propaganda ministry.
To make it more appealing they molded it to appeal to European pagans. They also killed a lot of them if they didn't convert. They literally demonized the faith, that's why demons have horns, pagans would wear horns as a symbol of nature. Pagans essentially went into hiding and had to mask their beliefs to continue their worship. That's why we pretend Christmas and Easter are Christian holidays.
It sounds like I'm taking a fedora tier gaff at Christians, not necessarily. Just the church, it really did do evil things in the name of conquering. There are Christians who are good people and use it to study what lies beyond and that's fine, but fuck the church.
