They were usually gnostic texts which were composed 2+ centuries after the other gospels/epistles.
Gnosticism runs adverse to basic christian understandings of salvation. It was not a conspiracy, the gnostics were heretics and no faith admits the texts of a heretical sect into its canon.
Because people pick and choose what to have in their "Canon" all the time in the early days. It wasn't until the 4th century did they work out a continuity that we know today.
In the very early days you had guys like Marcion of Sinope who were like "I don't like this Jewish shit, get this the fuck out" and so he just had the Gospel of Luke but edited all the Jew stuff out accusing someone else of redacting it after whoever wrote Luke.

Gnostics most often deny the truth of the Christ. They deny the I AM in the burning bush and decry the God of Israel as a demiurge. Their praxis was good, but their belief was not.

Not really. They are heretics. Those who do not abide right doctrine are heretics. Those who espouse false doctrine are, by definition, heretics.

Not really. It means that they're not in communion with a legitimate church and believe/preach things contrary to the truth.

No one really called themselves "Gnostic" in early Christianity. They were just a wide ranging bunch of thinkers who applied all sorts of myth and Platonism onto the Jesus narrative.

Not necessarily, quite a lot believed in THE God and don't make a distinction between the God of Isreal Yahweh and the God of the New Gospel (unlike people like Marcion of Sinope) but believe that the world they inhabit was created by a lesser clumsy god to explain all the wrong and evil in the world but that their soul/spirit/spark is from the divine and therefore they are still children of the One True God

Christ was a heretic to the Jews who He was prophecied for, so who cares what people say. Gnostics can believe in OT, and they don't deny the I Am of the Burning bush, no one is the same as the other.
Also, Gnostics don't believe in the same communion "mainstream" Christian's do because 1) Christ says it is not about the bread but live off of every word of God... and 2) because no priest should ever be called "Father" because there is only one Father who is worth receiving communion from that is not a wafer in a church.
If that is what you believe, then I respect your choice to believe in the common orthodox church and stuff, however you aren't a heretic for believing that way. Christ says "love your neighbor" and "don't judge, unless you be judged"

I mean now the term "Gnostic" is for people trying to explain what they ate experiencing with Christianity. Also it is used as a "heretic label" because people are so used to believing the stereotypes they hear.
