Why must a Jew adhere to all 13 principles of faith? How do we know the Tanakh (Old Testament for gentiles) is as it was when Moses received it?

Moses obviously didn't receive the entire Tanakh nor was he likely to have "received" the Torah (see JEDP textual criticism).

The Articles of Faith come from 12th-century Rabbi Maimonides and while they are based on Scripture, they are not specifically outlined in the Torah or Tanahk. They are beliefs (like the Nicaean Creed) and not explicit instructions for rules of conduct (with the possible exxception of number 5, Prayer is to God only)
