How would the political landscape of Europe change in the event of France winning the Franco-Prussian war?

Democracy becomes less popular considering we now have a Bonaparte leading France and no WW1 to destroy the old empires

Doubtful. France wasn't that expansionnist at the time.
Maybe Saarland and Luxembourg, but the whole left bank is too full of Germans.
And communism was already a thing then. If republicans don't get into power, maybe communists will become the leading anti-monarchist force and take over Europe at the next crisis.
And war might still happen. Germany won't unite then, but they'll keep trying, and then they'll want a rematch.

Hard to say, since that outcome was highly improbable.
France had terrible logistics and worse commanders.
Great soldiers, led by mediocrities.
But an extended Second Empire is an interesting counterfactual.
