How would say 100 Roman soldiers go about beating a Greek phalanx of the same number. I think it would be impossible to get close to them. Or do you just have to do damage with ranged weapons

They would our manoeuvre the phalanx. A phalanx isn't effective in such small numbers, it has to be a long and deep line.
They would be knowledgeable enough not to engage them head on on an open plain. The Romans originally adopted the Phalanx. It was their practically that caused them to evolve their tactics. The Phalanx was too inflexible and relied on too many uncertain variables to be the effective force projection that Rome demanded of its armies.
