But if Jesus is perfect, he isn't human because all humans are sinners. Perhaps he isn't perfect but had the most willpower to not sin. Sin must have tempted him and once crossed his mind but had the will and faith to not sin, thus meaning he isn't perfect but also never sinful

You misspelled Sadducees. All Pharisee documentation merely forbids the mixing of medicine (which Jesus didn't do) and even then, carved out a rather large exception because serious ailments, like sore throats, are exempt.

It's an interesting question that I cannot give you a biblical answer to.
But Jesus said He only did what the Father showed Him to do, and obeyed the Father in all points and at all times.
When the devil tempted Jesus, was Jesus tempted? Yes. Jesus was tempted at all points, but never sinned.
Was Jesus tempted to sin? In my personal opinion, no.
Did Jesus sin? No. Had He sinned, He would have stayed dead, a blemished and unfit sacrifice for the rest of us. The resurrection is proof positive that Jesus never sinned.
But to go deeper, why do we sin? We sin because we do not allow God to provide for us 100% of His Love, Acceptance, Meaning and Purpose in our life. We sin to find things to satisfy those needs.
At no time, but forsaken on the cross, did Jesus ever allow those needs to be unmet.

It is not and furthermore is not used to define what sort of "work" may or may not be done on the Sabbath. There is 0 record, 0, that the Pharisees forbade miracle working on the Sabbath, or considered such a violation. The Gospels specifically focus on the healing aspect, not the miraculous aspect.

Because the fundamental claim is that the Pharisee condemnation of Jesus stemmed from his miraculous healings on the Sabbath, miracles being a form of work and thus sabbath breaking.
There is nothing regarding miracles entioned in any Pharisee text about what does and doesn't constitute working on the Sabbath. And just generally, while mixing of medicine is forbidden, the exception (since it can be disregarded if serious health issues are at stake) pretty much swallows the rule.
The "Proof" against this is a bootstrapping argument from one verse that doesn't even describe the act of creation, where the word עָשָׂה is invariably used, it's just the reflection.
Christians: Have no clue what they're talking about when it comes to Judaism, yet strut around like they're experts. They don't even realize how many errors the Gospels have concerning 1st century Judaic life and why that means they were almost certainly not written by eyewitnesses native to Judea.
