The real answer is: the term World War was created by narratives that favored nation-states.
As the Seven Years War was fought by non-nation states, it didn't count.

And before you say: "But their colonizers made them" note that India wasn't yet colonized though Allied Princes fought in behalf of European partners in India while in the Philippines, when the colonial capital of Manila fell to the Brits, the natives declared a capital in the northern Philippines and continued fighting the Brits guerilla style, independent of Spanish leadership since they saw it as a holy war versus Protestant Heretics.

WWI and WWII are such huge walls that noone thinks that old wars can even compete
