Short version is Mugabe.
Long version is that Mugabe was either hilariously incompetent or maliciously fucking up the country and then taking advantage of the damage to stay in power. Remember that Rhodesia was dealing with two competing insurgency groups - ZANLA and ZIPRA. Mugabe was part of ZANLA, and, once the open elections were conducted, Mugabe had his rebel group go about suppressing and intimidating voters to allow him to win the election.
Upon getting into power, he began a process of redistributing land to alleviate the massive wealth disparity. At first, it wasn't all that bad - land had to be sold willingly, and it was bought at a fair price. However, this gradually gave way to forceful seizures. The redistributed land was usually passed onto Mugabe's supporters whose only qualifications were that they were on good terms with Mugabe. Unsurprisingly, they proved pretty terrible at managing these massive farming operations, which pretty quickly collapsed, taking the economy with it.
Once the economy collapsed, Mugabe was able to seize upon the poverty and famine to punish his rivals. What little food there was could be diverted away from areas and ethnic groups friendly to ZIPRA, and by keeping areas less than friendly to him barely subsisting, he could maintain a facade of legitimacy by still holding democratic elections (it's not like those starving people are going to be able to make it to the polls).

What makes this all the funnier is that they actually got 44 million pounds from the British to enable them to gradually and effectively redistribute land with compensation. A combination of factors. Generally, transitions to majority rule have been very sloppy, and little thought seems to be given to training some competent people to be in power. Instead, you end up getting whoever was most powerful during colonial times, and those people tend to be less trained to really lead a country and more trained to keep the populace in check so the colony could be exploited. Often times, these strongmen would seize upon some kind of nationalistic or ethnic pride, either by directing any animosity towards whatever ethnic group wasn't in power (Angola, Zimbabwe), or directing attention outwards towards uniting a common people (Somalia).
And then god forbid you were unlucky enough to be in a strategic location, you were bound to have either the West or Soviets sticking their dicks into things. Angola, for example, had the misfortune of having both the Soviets and Americans pouring resources into the country to both establish and combat a communist regime, respectively. The Horn of Africa was another clusterfuck - Ethiopia had American support for a while and Somalia Soviet support, and then they flipped in 1978.
Even if you were lucky enough to not have a superpower actively trying to usurp your government, you still often had to deal with insurgents sponsored by neighboring nations (as we see in Ethiopia and Kenya) or merely basing themselves out of your country (Pretty much everyone that shared a border with South Africa and Namibia).
All that meant that strongmen were most likely to get into power, and any reasonable government was liable to either get overthrown by an insurgency, or become an oppressive regime as it tried to combat one.
After Mugabe stole the election and made him self de facto dictator. the remaining white farmers changed to profitable crops like tobacco and cotton, instead of food crops. Then Mugabe killed or chased off the white farmers and gave the farms to his cronies.
