Poland didn't "save" them, Sobieski had a half German and half Polish army and Austria did most of the work by holding down Vienna, picking the Turks off one at a time was the easy part.

Russians wanted more Slav lands badly, while Austria and Prussia didn't want Russia's relative power to grow. However, they saw that Russia's influence in the Commonwealth was huge and growing, so they thought they would rather split it now, rather than Russia eventually swallowing it whole.
