There is a few good ones, I prefer first person accounts, in Mexico the Diaz del Castillo journal is exelent for example, truly a must if you like the theme. Then depending of what do you prefer to learn (is a very extense subject after all) be it the military or native believes/folklore, cuisine... I'm sure it will be plenty of books about it if you speak Spanish or Portuguese.
