I have been struggling with this for a while and I cannot just stick to text logos I need to add that "custom" feel to my logos. How can I use shapes maybe from photoshop and the pen tool with ease because those stress me out

Just get custom symbols or something, some are free, or buy em.

You can also make custom icons by combining shapes and parts of fonts, or other patterns, custom shapes, etc.

draw it on paper - scan it - use the pen tool on illustrator to image-trace it.
