So I installed Ubuntu Mate for shits and giggles. It's been a while since I've ran an Ubuntu derivative.

I'm fairly certain the same things here would apply to an installation done via the Ubuntu minimal route.
Not sure if it automatically installs lightdm for you, but I know the recommended and suggested packages are overkill.

Ubuntu MATE is maximum /comfy/ for noobs. If you OP know your way around linux (and you obviously do consering what trigered you) then you go for another distro like Dedian or Arch or whatever.

Nah, it's gnome-disks fault I guess. I just ended up changing the options to default,noatime. It's basically a gui for fdisks, but that default setting seems a little ridiculous to me.
It just seems like maybe it's a bad idea to have so many insane defaults for the sake of being "comfy".
For the record I prefer ext2 on my sticks.
