I'd like to mount this 55" on a swivel above my fireplace because of the odd layout of my apartment, but there are no studs in the middle. The studs are on either side and 40" between them. Could I mount a swivel on one of the studs and push the TV to the center when not in use? Aren't there mounts built for this?

Tear open the wall, secure anchoring wood where the want it, patch over with drywall.
as long as the mount is securely fastened to the stud, and it provides mobility in such a way that positions the tv where you want it, you're good.
you could also get a sheet of 5-ply, cut it the width of the studs, paint it the same color as your wall, and screw it to the studs, then mount to that, instead of the studs. this would elimnate the need of finding some weird type of swivel, since you could mount it directly behind the center of the TV

Do you plan of using the fireplace or is just decorative, in the first case your tv will become a dust magnet
