Nvidia GPUs are god like in power efficiency I suggest a 300watt PSU and you will be fine.

1070 hits its 150w TDP under normal gaming load and 160w at torture load. Your typical PSU will be more than sufficient.

Measuring my power usage it never even goes above 300W for the whole system

Considering it's not a shit PSU, it will handle only 360W, so if you were to switch to RX490 or whatever will it be called, you would probably have a serious problem.
