If they went back in time and made it so Android could get core updates from Google and the only things manufacturers/carriers could do were more modular then Android would be literally perfect.
The horrendous update mechanism with no facility for urgent security patches, read-only /system, out-of-tree kernels and blob drivers for SoCs, delays (often infinite) from OEMs and carriers in rolling out even the smallest and most critical updates, and fucking Java.

It's not just about the software but hardware too. While iPhones are stuck in 2012 with 1080p screens, android phones are already starting to get 4K displays. While iPhones only come in up to 128GB storage options, Android phones can achieve almost 400GB of storage with 128GB of internal storage + 256GB microsd card. Listen I used to own an iPhone 6S and all that smooth user experience magic wears off as time goes on. At first everything will be fast and whatnot but as time goes on that 2GB of RAM will be used up and your iPhone will start to lag HARD. With android you have 2-3X the breathing room before that happens.
Leaving apple behind was one the best decisions in my life. Now I have an HTC 10 with a 90MB/s 128GB microsd card.
