I'm currently thinking of upgrading my CPU from i5 2500k to i7 5820k.
My current rig is:
i5 2500k;
GTX 970
16gb ram ddr3

And with the upgrade I'll have
i7 5820k and 32gb ddr4.

I use my rig mostly for 3d work, rendering, graphic applications and gaming.

I've got a few questions:
1. Should I get 5820k or 6800k? Both are 6-core CPUs, and I'll surely utilize the cores in rendering and 3d modelling, but is there no diminishing returns over choosing 5820k over 6800k? The tests mostly focus on games, so it's difficult for me to choose.

2. I've got a PSU SeaSonic S12II-620. Should I upgrade it to something beefier, along with the CPU? Coolermaster calculator tells me: Recommended PSU Wattage: 585 W. I know it might be retarded, because it's lower than 620W, but will I be fine?

I will most likely OC it. And I got the wattage calculation after giving an OC results into the calculator. Although, indeed I'm going to spend quite a bit, I'd prefer to avoid spending anything more than an absolute minimum.

Is 6800k really this better for a price spike?

The psu is getting a bit dated, no point in not getting something just for the warranty honestly. Hes already spending atleast 600. Another 80 won't hurt anything.
He may want to move to sli in the future anyway.

I got an rm1000x for 100 dollars on sale last year and its ez no stress, fans never turn on, modular swag etc.

10-15% better in synthetics.
But yeah games won't give you much of a performance increase.

My old tx650 did push my 970 to 1600mhz and my 3570k to 5ghz with no issues, but the fan did kick in often.

I see. I'll read up a few more benchmarks, but most of them omit any 3d renderers, and focus mostly on 7zip or cinebench.

Well, if I consider getting a new PSU and 6800k, there's the eternal question about RAM speed. i7 5820k supports a max of 2133, while 6800k supports much higher. Does the memory speed still not really matter? I guess getting DDR4 2133 won't really be any slower than DDR4 3000.

My 2500k is still great for vidya, but when rendering stuff, it chokes a big time.
Theoretically, I could buy 20 core2duos and make a small renderfarm, but it's an effort I wish not to take.
