I have a desktop for gaming , so I won't be doing much gaming on it. I like going to parks and coffeeshops and doing work there so this is mostly what I'll be doing

Hopefully something under $600. Not too bulky. Any screen size from 14-16 inches. Durable would be nice

Considering one of the HP Elitebooks or the Thinkpads.

I'd recommend getting a Dell Latitude 5250 with a docking station and swap out the standard HDD for an SSD. You can find them on Amazon pretty cheap for around $450

15 inch laptops are "too bulky" in the context of travel. You don't need that much overall size, nor are you doing your battery life any favors with more screen to illuminate.

Look for 13-14" laptops. There's a 13" Aspire S5 with a 1920x1080 IPS and supposedly good battery life. $600 or under easy.

I have the XPS 15 but I dont have a gaming desktop, it handles all my CAD/CAE perfectly.

Honestly, the most taking thing you will be doing on your laptop as an engineering student is probably a 50 part assembly in SW.
