Linux has absolutely terrible support for hardware variations. I've tried dual booting tails onto a macbook like they show their thing working with and it's a fucking nightmare for a million reasons. I'm guessing that shipping with your sole input hardware means you only have to build with support for that one and makes it more likely to actually work.

That or they just need it to look like it's something they can charge you for that isn't a free linux distro on a $1 sd card.
