both teamspeak and mumble are piss easy to setup, mumble even easier if you get a cheap VPS like off ramnode

for example on ramnode:
1. disable root, setup pubkey auth only and rate limiting for ssh, (changing port will help cut down on fluff in logs)
2. install mumble
3. setup unattended upgrades for security
4. never touch it again
bonus: occasionally login and update the murmur binary

The issue with the decentralized system is that people want to be able to login from different computers, and not have to hassle about re-adding all of their friends.

Regardless, Ring or Tox, the only people who are going to use them are the people who aren't already using Skype or Discord-like software.

The only thing you can't fully control with some dedication is the server.
There are dozens of inofficial APIs either wrapping around the official API, or implementing their own methods of processing the data received from the discord servers.
If you're truly paranoid, go and implement a discord client with end-to-end encryption for you and your friends to use. That's a pain in the ass to do properly, but it's an option you're not even given with skype.
If, however you're worried about the NSA, the Chinese Government and your mommy finding out who you're talking to (social graphs and shit), I think there's no solution to that possible with Discord.

As far as Discord, it's good. It has things it needs to implement and is still a new program. The devs are actively working to make it better and listen to their users more so than microsoft does. Specifically the Skype community.
It works on multiple platforms and has fewer intentional backdoors than skype. Ever since Microsoft fucking bought Skype it has gone to the shit-house quickly. For example, every update takes away options and introduces ad revenue for microsoft in the guise of a "functionality update".
All my friends are on skype and we're slowly migrating to Discord. But we still use skype for video and our friends list.
As far as the other programs most of these 14y/o circle-jerk enthusiasts claim that are superior; it boils down to your friends list. Wherever they are you should be too. Unless you want to live in a cabin in the woods to keep the gubment away from yer delicious secrets.

We switched to Discord for videogame voice communication and couldn't be any happier.

Especially it's nice how easy it is to invite new people - by just giving them one link they can join in seconds.

I moved from paying annually for my team speak server to discord which is free and doesn't have any slot restrictions

Plus the phone app is free and it had it's own dedicated text channels for general chat
