I'm going to be getting a 1080 soon and want to upgrade my monitor. I currently have a Dell 1440p 6hz.

My options are:
1440p 144hz gsync or
4k 60hz

What would you do?

Depends on primary use of computer. If gaming or watching shows I'd get the 144hz. If it is mostly for work I'd get the 4k.
