Forgive the noob nature of this question. What's the best way to stay anonymous online? VPN, Tor, seven proxies? I understand outlaw groups of various ideologies have Twitter, blogs, facebook and other social media yet remain anonymous. How do they hide the ip, what is even a MAC address? How do I cover my tracks online?

Mix up your writing style. There's plenty of identifying features in someone's personal style of writing, what spellings they use, what words they consistently misspell, uncommon grammatical structures, regionalisms, etc.
It's not theoretical stuff either, it's proven to be very effective to distinguish individuals in surprisingly little samples of text. This is something /g/ always overlooks, but this deeper analysis will probably become easier and more prevalent.

Unless you're doing something that will actually get attention, just using Tor will probably be enough.
