So the native resolution for this 14inch laptop (ThinkPad) is 1920x1080.
This is way too fucking high. Text looks like a font size 6 in print.
So I turn it down to 1600x900 and a few others and everything's blurry.
How can I have a sharp/crisp image without everything being so tiny?

Set back the 1920x1080 and adjust the interface scaling (high DPI) options. In your case ~125% should be fine.

But there isn't a global setting for this. I can make Chrome zoom in 150%, and increase font size in terminal to 20px etc. but what about everything else?

I don't know which DE you are using and if you are using one at all, but the major ones like Gnome & KDE definitely have such options under display settings. If it's really unavailable on your system, just lurk how to adjust interface scale with configuration files.
