This will sound weird, but upgrade to windows 8.1. Classic Shell can give you the windows 7 start menue and explorer back, and let you customize a bunch of things. Glass8 (one of the older 1.2 versions) and glasspwn can give you the exact look of windows 7. Howeer windows 8 has a better wifi connection window, can monitor used data, is more stable, has native ISO mounting, and is generally better once you gt rid of the hidious start menue

Microsoft will keep pushing harder and harder for you to update to windows 10 until you have absolutely no choice.

You don't need to be offline, it will only do it through the Windows update and that's if you let it. If you've set Windows update so it automatically downloads and installs all updates, then you will get Win10 upgrade. If you only get security updates, then you're safe.
If you manually select optional updates and avoid few Windows 10 related ones, you're still safe.
