Because Nvidia figured out how to make a profit.

Nvidia is stuck with whatever TSMC can provide, which in this case is their own 16nm node, while AMD can use whatever GlobalFoundries has to offer, which includes the 14nm node they licensed from Samsung. While Polaris 10 and 11 are to be produced by Globalfoundries, their higher end chips coming later this year are however going to be made by TSMC.
